【摘要】 目的:建立掺伪辣椒面的鉴别分析方法。方法:通过感官检测、漂浮实验、高效液相色谱分析其色素或微量有机成分进行综合判断。结果:不法商贩常在辣椒面中掺入盐、色素、玉米芯、蕃茄干、锯木粉等植物性粉末或完全用此类杂物经染色处理后冒充辣椒面。结论:掺伪辣椒面可以通过感官检测、漂浮实验、淀粉、食盐等的定性、定量检测以及高效液相色谱法分析其色素或微量有机成分来进行综合鉴别,本文采用的方法对类似的食用粉状调味品的掺伪检测也有一定的参考价值。更多还原

【Abstract】 Objective:To set up an analytical method to distinguish the falsify of Chinese chilly powder.Methods:Sense organ cory examination、floating experiment、high performance liquid chromatography were used as synthetical judgement to analyze pigment or micro-organism.Results:The violate law businessmen always put the kind of plant powder like salt,pigment,comcobo,sawdust and so on into the Chinese chilly powder,or completely used these dyed sundry goods instead of Chinese chilly powder.Conclusion:The falsify Chinese chili powder can be examined by the sensory examination,floating experiment,starch,table salt of qualitative and quantitative analysis examination,also the high performance liquid chromatography can be used as synthetical judgement in analyzing its pigment or micro-organism.The method provided by the paper can also examine the similar edible powdered flovoring.更多还原
