杀菌新技术在食品加工中的应用
Application of the sterilization technology in the food processing
【摘要】 随着人们对食品安全问题的日益关注及科学技术的发展,食品杀菌技术不断得到研究与应用。运用杀菌技术可以延长食品的货架期,保持食品安全,减少微生物。并介绍了目前国内外的一些杀菌新技术,及新技术的原理在食品加工中的应用。
【Abstract】 Food sterilization treatment is a working procedure of prolonging shelf life and reducing putrefaction bacteria or microorganism in order to maintain food safety.With the more and more attention of people for food safety and development of science technology,much research and application of the sterilization technology have recently been made.This paper introduces some kinds of food sterilization technology,such as irradiation,magnetic force sterilization,impulse light sterilization and so on.At the same time,the mechanism,new equipment and current application in the food industry of these technology have been introduce.
