【Abstract】 High intensity pulsed electric field(PEF)provides effective inactivation of microorganisms.Otherwise,the application of PEF in industrial scale is blocked by the high cost of the PEF equipment,the complexity of influencing factors,and the indetermination of the influencing mechanism.So,it’s necessary to confirm the influencing mechanism,the regulation of the PEF,the product safety before the application of PEF in industrial scale.In this paper,the inactivation mechanism,critical influencing factors,and related aspects of PEF inactivation were reviewed and discussed.更多还原
