茶树菇提取物的组分分析
【摘要】 茶树菇[Agrocybe cylindracea(Dc.ex Fr.)R Maire]为近年开发的新型食用菌。茶树菇提取物中蛋白质的质量分数占干重的29.5%,粗脂肪的质量分数占干重的0.16%,灰分质量分数占干重的16.1%,碳水化合物质量分数为干重的46.22%,其中多糖的质量分数为43.6%。茶树菇提取物含有丰富的钙(3.607mg/g)、镁(3.021mg/g)、锌(79.3μg/g)、铁(79.2μg/g)等元素。茶树菇是一种高蛋白、低脂肪、富含真菌多糖、矿物质含量相对较高的食用菌。
【Abstract】 Agrocybe Cylindracea is a new type of edible fungus. In the extract of Agrocybe Cylindracea, the protein , crude fat, ash, and carbohydrate account for 29.5% ,0.16%,16.1%,46.22% on dry weight basis, respectively. The polysaccharide content was 43.6% in the crude extract. The extract of Agrocybe Cylindracea is rich in metal elements, including calcium(3.607mg/g), magnesium(3.021mg/g), zinc(79.3μg/g), iron(79.2μg/g).Therefore, Agrocybe Cylindracea is a high protein, low fat edible fungus which contains minerals and active polysaccharides.
