海蛰浸泡过程中甲醛含量的变化与分析

【摘要】 鉴于水产品中甲醛有本底含量,应用酚试剂分光光度法测定海蛰在不同温度、不同浸泡时间内的甲醛含量的变化。结果表明,海蛰内甲醛随着浸泡时间延长而逐渐降低,温度高时甲醛消解速度大于温度低时。浸泡一定时间后换水,甲醛浓度下降快,利于海蛰中甲醛的消除。建议海蛰食用前浸泡要多次换水。

【Abstract】 In view of containing background formaldehyde in the fishery products, we determined formaldehyde content in jellyfish at different temperature and soaking time by spectrophotometric method with phenol reagent. The results have been shown that formaldehyde content in jellyfish gradually decreased with increasing soaking time and temperature. At the same time, it is helpful for decreasing formaldehyde content in jellyfish to change water frequently after soaking some time. So we suggest that jellyfish should be changed water many times during soaking before being eaten.
