花生壳膳食纤维提取工艺及其性能研究

【摘要】 以花生壳为原料,采用碱液浸提法制备花生壳膳食纤维。结果表明:提取花生壳膳食纤维的最佳工艺条件是1mol/L NaOH溶液,温度40℃,反应时间4.0h。花生壳膳食纤维的最佳脱色工艺条件为 pH=12,6%H2O2溶液,温度40℃,反应时间6.0h。成品气味淡,色泽呈淡黄色,其膨胀力高达5.73mL/g, 持水力为615.86%。

【Abstract】 The technology of extracting dietary fiber from peanut shell was studied by alkali solution. Results showed that the optimum conditions of the peanut shell dietary fiber extraction were as follows: Imol/L sodium hydroxide, 40℃, 4.0h. And the optimum conditions of decolourling were as follows: pH = 12, 6%H2O2, 40℃, 6.0h.The products smell well and the colour was slightly yellow.Its expansive capacity was 5.73mL/ g and water holding capacity was 615.86 % .
