酸乳EPS的提取研究

【摘要】 研究了酸乳提取过程中的蛋白质的除去及EPS的提取,先后通过选择适当TCA浓度、调pH值热处理除去蛋白质,通过正交试验确定了EPS的最佳提取工艺。结果显示:选择20%TCA沉淀离心后调pH值7.0热处理能除去绝大多数蛋白质,EPS的最适提取方法为乙醇浓度70%、提取时间为1d、提取乙醇、溶液体积比为1:1。

【Abstract】 The displacement of protein and the extraction of EPS in yoghurt were studied, through selecting proper concentration of TCA, adjusting pH value and heating to displace protein by centrifugation, then through a orthogonal experiment to determine the most appropriate conditions to extract EPS from yoghurt. The results were as follows: selecting 20% TCA to centrifuge, then adjusting pH to 7.0 and heating, most of protein in yoghurt would be removed; and the most proper extracting technology of EPS in yoghurt were as follows: the concentration of alcohol is 70%, the time of extracting is one day and the proportion of alcohol and solution is 1:1.
