深黄被孢霉菌粉的主要营养成分及其调节血脂作用

【摘要】 为探讨直接应用深黄被孢霉菌粉调节血脂的效果及其营养基础,采用常规分析方法对菌粉进行了主要营养成分分析,并按照卫生部《保健食品功能评价和检验方法》进行了调节血脂功效的动物实验,结果显示:该菌粉含有66.9%不饱和脂肪酸,47.2 mg/gγ-亚麻酸,3.83 mg/g维生素E及35.3μg/g微量元素硒。高剂量的菌粉使喂饲高脂饲料大鼠的血清总胆固醇(TC)浓度明显低于空白对照组和溶剂对照组,血清甘油三酯(TG)浓度明显低于溶剂对照组,血清高密度脂蛋白胆固醇与总胆固醇的浓度比明显高于空白对照组;且均具有显著性差异(P<0.05)。表明深黄被孢霉菌粉富含γ-亚麻酸、维生素E和微量元素硒,具有调节血脂的作用,可作为一种经济的亚油酸和γ-亚麻酸等多不饱和脂肪酸的补充途径。

【Abstract】 Nutritional composition of Mortierella isabellina Oudem mycelia(MIOM) and its effect on blood lipids of experimental rats was studied in this paper.Composition analysis was done using conventional standard methods.Effect of Mortierella isabellina Oudem mycelia on lowering blood lipids was investigated according to the Guidelines of Ministry of Public Health of the PRC on the appraisal procedure and experimental methods of functional foods.The results showed that there was 66.9% of unsaturated fatty acids,47.2 mg/g of γ-linolenic acid(GLA),3.832 mg/g of vitamin E(VE),and 35.3μg/g of selenium(Se) in MIOM.High-dose of MIOM(1.08 g/kg) definitely lowered the concentration of total cholesterol(TC) and triglycerides(TG) and markedly increased the ratio of high-density lipid cholesterol against total cholesterol in experimental rats as compared with control group(P< 0.05),which indicated that Mortierella isabellina Oudem mycelia rich in GLA,VE and especially Se were effective in lowering blood lipids and MIOM could be used as a cost-effective way to supplement polyunsaturated fatty acids such as GLA.
