微胶囊化提高鞣质稳定性的研究
Study on Encapsulation of Tannin for Improving Its Stability
【摘要】 为提高鞣质的稳定性,以β-环糊精、乙基纤维素、海藻酸钠为复合壁材,单甘酯为乳化剂,将鞣质制成微胶囊产品,探讨了微胶囊鞣质的稳定性。结果表明,鞣质微胶囊化后可以明显提高鞣质的光稳定性和热稳定性,减弱了氧气对鞣质的氧化降解及pH值、水分等的影响,低pH值、真空、避光、低水分含量有利于微胶囊鞣质的保存。
【Abstract】 Tannin was microencapulated with different wall materials such as β-cyclodextrin、ethylcellulose and sodium alginate,and glycerol monostearate was used as an emulsor in order to improve its stability.The stability of microencapsulated tannin was studied,and the results showed that the light and heat stability of the microencapsulated tannin was better than ordinary tannin.The influence of pH、water and oxygen on the degradation of tannin was decreased.Lower pH,high vacumn,away from light and lower moisture are good for the storage of microencapsulated tannin.
