【摘要】 采用 DPPH 法测定天然胡椒碱的抗氧化活性,并研究了光、热、pH 等因素对它的影响.结果表明：胡椒碱具有一定的抗氧活性,其抗氧能力相当于维生素的60.05%.在酸性介质中可稳定存在.60℃保温处理2h 后比较稳定,但自然光的照射会引起吸光度值的下降.更多还原

【Abstract】 The antioxidant effect of natural piperine was determined by the method of DPPH·(1,1-dipheny-2-picryl- hydrazyl free radical).The effects of light,heat and pH on its stabilities were also studied.As a result,the natural piperine showed an antioxidant capability approximate to 60.05% of the vitamin C.and it could exist stably in acidic medium and was rather stable for temperature at 60℃ in two hours,but absorbance could be decreased by natural illumination.更多还原
