合作猪背最长肌肌内脂肪酸组成及含量的研究
Study of Composition and Content of Fatty Acid in Longgissimus Muscle of Hezuo Swine
【摘要】 试验选取放牧饲养的合作猪25头,按6月龄、12月龄、18月龄3个阶段分别屠宰后取背最长肌,经甲酯化后用气相色谱法测定肌内脂肪酸含量.结果表明:合作猪肌肉脂肪酸组成主要是C16和C18脂肪酸,以棕榈酸(C16∶0)、硬脂酸(C18∶0)、油酸(C18∶1)和亚油酸(C18∶2)为主.另外,十三酸(C13∶0)、十五酸(C15∶0)、十七酸(C17∶0)、十九酸(C19∶0)含量相对较高,占总脂肪酸的10%左右.随月龄增长,不饱和脂肪酸有下降的趋势,而饱和脂肪酸则有递增的趋势;多聚不饱和脂肪酸与饱和脂肪酸的比率达到或超过了人类营养学认为的最佳比例(0.45).
【Abstract】 This trial is conducted to study the composition of fatty acid in longissimus muscle of Hezuo swine.25 gilts are selected for slaughtering at 3 stages(6-month-old,12-month-old and 18-month-old).The results show as follows:the major fatty acids of Hezuo swine are fatty acids of C16 and C18.Palmitic acid(C16∶0),stearic acid(C18∶0),oleic acid(C18∶1) and linoleic acid(C18∶2) are the great majority,and tridecanoic acid(C13∶0),pentadecanoic acid(C15∶0),heptadecanoic acid(C17∶0),nonadecanoic acid(C19∶0) have the certain comparison about 10%.With the growth of age,nosatruration fatty acid becomes less and less,whereas satruration fatty acid becomes more and more.PUFA/SFA(P:S) of Hezuo swine are equal to or more than the best ration(0.45) in human nutrition.
