虎奶菇子实体有性结构及其各部位蛋白质营养价值评价

【摘要】 利用扫描电镜对虎奶菇子实体的有性结构进行了观察,并采用国际通用的评价方法对其不同部位的蛋白质营养价值进行综合评价.结果表明,虎奶菇子实体为单生或丛生,原基乳白色,一般朵质量为48~78 g,大的可达220 g; 其结构分为3层,上层表皮层,中间层为髓部,下表层为子实层,表面起伏不平,有不规则疣状突起.各部位蛋白质营养综合评价的结果显示,虎奶菇子实体以菌柄皮的营养价值最高,其次为菌柄肉.

【Abstract】 The sexual structure of Pleurotus tuber fruitbodies was observed by scanning electron microscope, and the protein nutrition of different parts of Pleurotus tuber-regium was valued by the current international method. The results showed that Pleurotus tuber-regium was solitary or tufted,it’s primodi-um was milk-white and weight was generally 48-78 g,the biggest was 220 g. The structure of Pleurotus tuber-regium included three stories:the outmost story was epidermis,the middle was medulla,and the undermost was hymenium. The surface of it on which there were some irregular verrucous enations. Comprehensive evaluation indicated that nutritional value of stipe-bark was the highest, secondly stipe-meat.
