乙醇逆流法提取枣汁的工艺优化

【摘要】 以德州金丝小枣为原料,以乙醇为浸提液,采用逆流工艺提取枣汁.确定工艺条件为:酒精浓度95%, 二级逆流提取方式,提取时间38 min,原料重量与浸提液体积之比为1(g):3.7(mL).用此工艺提取的枣汁较其他方法具有提取时间短、枣汁香味好和中间生产过程中物料不易被杂菌污染等优点.

【Abstract】 In the paper,Ziziphus jujube cv. Jinsixiaozao produced in Dezhou was used as raw material,ethanol as solvent, and counter-current extraction as technology, the extracting Jujube juice was studied. The results show that the optimal parameters for extracting Jujube juice are as following:ethanol concentration 95%, two-stage counter-current,time 38min and the ratio of raw material weight(g) to solvent volume(ml) 1:3.7. Comparing with other technology,the advantages of this technology is that extracting time is more short,the aroma of Jujube juice is better and extracted material in process production is not easy to be polluted by wild microbes.
