【摘要】 目的 研究能有效控制影响矿泉水微生物污染的管理方法。方法 采用危害分析关键控制点(HACCP)系统。结果 找出了影响矿泉水卫生质量的关键控制点,提出了解决的方法,提高了产品的卫生质量。矿泉水的水源水、灭菌后水和灌装后水质量前后合格率相比x~2值分别为8.95、6.67、5.43,P<0.01和0.05。结论 HACCP应用于矿泉水生产中,将危害控制在发生之前,保证了产品的质量。更多还原
