我国春播小麦淀粉糊化特性研究
Investigation on Paste Property of Spring-sown Chinese Wheat
【摘要】 4 7个春小麦主栽品种于 1998和 1999年分别种植在哈尔滨、沈阳、呼和浩特、北京、西宁和乌鲁木齐等 12个试点 ,用快速粘度仪 (RVA)分析其面粉糊化特性。结果表明 ,不同试点的样品间淀粉糊化特性差异较大 ,来源于哈尔滨、沈阳、北京、巴盟、永宁和乌鲁木齐等试点的样品淀粉糊化特性较高 ,而来源于西宁和拉萨试点的样品淀粉糊化特性较低。基因型、环境以及基因型与环境互作不同程度地影响所有淀粉粘度性状。淀粉糊化特性间及其与降落值间均呈 1%或 5 %水平正相关 ,但相关系数大小因性状而异 ,峰值粘度是衡量淀粉糊化特性的最重要指标。
【Abstract】 Forty seven spring sown spring wheat varieties, sown at twelve locations in 1998 and 1999, were used to investigate paste properties of Chinese spring wheat. Significant differences were observed for all paste traits. Samples collected from Harbin, Shenyang, Beijing, Bameng, Yongning and Urumqi perfrom better paste quality than those from other locations. Genotype, environment and genotype×environment have an effect on all paste traits. Significant correlation among paste traits and falling number were observed. Peak viscosity is the most important trait for paste property.
