天仙果红色素的微波提取及特性研究
【摘要】 对天仙果红色素的提取及理化性质进行了研究,结果表明,该红色素为水溶性黄酮类花色素,其耐短时热处理、耐酸、耐糖、耐还原性及耐光性较好,但耐碱性和耐氧化性较差;耐Fe3+、Cu2+、Pb2+离子性质差。研究结果还表明,其提取宜在酸性介质中低温浸提,微波前处理有助于色素提取。该红色素在酸性条件下综合稳定性较优,值得开发利用。
【Abstract】 A favourable technique for the extraction and some properties of Ficus beechyana red pig ments have been studied in this paper.With pretreatment of microwave,the pig ments could be extracted more effectively in acid medium under low temperature.Result showed they belong to flavon,soluble in water,stable ag ainst short period heat treatment,acid and hig h sug ar concentration,meanwhile tolerant to reduction and lig ht,but sensitive to alkaline,oxidation and Fe ⒊+ ?Cu ⒉+ and Pb ⒉+ conditions,etc.
