集体儿童膳食中维生素C可获性评估
Evaluation of vitamin C intake in children in kindergartens
【摘要】 [目的 ] 了解上海市区学龄前集体儿童从膳食 (蔬菜 )中摄取足够维生素C的潜力。 [方法 ] 对既往 2 0年间用称重法 (每季度 1次 ,每次 3~ 5天 )或记帐法 (连续 1个月以上 )获得的上海城区托幼机构儿童膳食营养资料加以分析、比较 ,计算蔬菜和水果与动物食品 (除乳品以外 )、深浅不同颜色蔬菜之间的重量比例。维生素C的摄入量以占我国2 0 0 0年修订的营养素“推荐摄入量”(RNI)的百分比表示。 [结果 ] 80年代全托 (寄宿制 )儿童蔬菜和维生素C的摄入量 ,随年龄的增大而增加 ;其中 ,动物蛋白质供给较低组 (民办托儿 )摄入量略高于动物蛋白质供给较高组 (公办托儿 )。 90年代 ,公办托儿的蔬菜摄入量明显增加 ,且略高于同期调查的日托 (全日制 )儿童的平均摄入水平。当蔬菜和水果的摄入总量 2倍于动物食品 ,或绿色蔬菜的摄入量达到蔬菜总摄入量的 2 /3时 ,儿童可望获得理想的维生素C摄入水平。 [结论 ] 通过调整膳食结构 ,提倡合理营养 ,适量减少动物食品的供给量 ,有计划地提高绿色蔬菜的数量 ,幼儿和学龄前儿童是不难达到足够的维生素C营养水平的
【Abstract】 To study the potential intake of enough vitamin C from food for children in kindergartens of Shanghai urban area. The data of dietary survey in seven kindergartents during the past 20 years were analyzed and compared by two different methods,weighting sample food and records of weighted food.The weight ratio of vegetable/animal and green/light vegetables were counted.The intake of vitamin C in children was expressed by the percentage of Recommended Nutrient Intakes(RNI). In the 80’s,the intake was higher in boarding group provided with lower animal protein than those provided with higher animal protein.In the 90’s,the intake of vegetables in boarding group was much increased,and higher than that for day care children.When intake of vegetables and fruits doubled that of animal food,or the intake of green vegetables was 2/3 of total vegetable food,children may obtain perfect intake of vitamin C. [Conclusion] Preschool children may obtain sufficient vitamin C through adequately decreasing animal food and increasing the darkgreen vegetables.
