【Abstract】 This paper summarizes the accomplishments and the advances in the researches of the storing and keeping-fresh technology of green tea during the past twenty years from two aspects, ie, the quality worsening mechanism of green tea during the storage, and the present situation of its storing and keeping-fresh technology.
