板栗种子褐变底物及其在不同组织中的含量差异

【摘要】 为进一步探索板栗褐变的发生规律 ,对南方早熟板栗种子不同部位的单宁含量进行了研究。研究表明 ,成熟板栗种子中的酚类物质主要是单宁 ,其含量在板栗种子不同部位有显著差异。种皮中最高 ,其次是胚轴和内果皮 ;子叶表层单宁含量明显高于子叶中心层 ,子叶中心层含量又高于子叶中间层。板栗各部分褐变程度与单宁在种子中的含量密切相关 ,含量越高 ,褐变越严重。认为单宁是板栗褐变的主要底物

【Abstract】 In order to find out the browning patterns of chestnut,tannin contents in different parts of seeds from south China chestnut cultivars were studied.The results of the study indicated that the main phenolics in mature chestnut seeds is tannin. Its contents varied remarkably in different tissues. The content of tannin in episperm was the highest, the hypocotyl and endocarp followed. The content of the ectosexine of the cotyledon was higher than that of central-layers and the central-layers tannin was higher than that of interlayers. The browning degree of chestnut seeds was significantly related to the content of tannin .The more the content was,the greater the browning became. It was inferred that the browning substrate of chestnut seeds is tannin.
