【摘要】 目的 :研究猪肉保鲜剂的毒性及保鲜效果。方法 :毒性试验按《食品安全性毒理学评价程序和方法》进行 ,用猪肉保鲜剂喷洒于鲜猪肉表面 ,置于 35℃培养箱中 2 0小时后评价其保鲜效果。结果 :小鼠急性毒性 L D50 >10 0 0 0 m g/ kg,属实际无毒级 ;蓄积系数 K>5 .3,属轻度蓄积 ;小鼠微核 ,精子畸形试验及 Ames试验均为阴性。保鲜试验结果显示猪肉表面色泽不变 ,没有异味 ;光镜下观察 ,肌细胞排列整齐。结论 :猪肉保鲜剂没有毒性作用 ,具有明显的保鲜效果更多还原

【Abstract】 Objective:To study the toxicity and efficacy of pork preservative.Methods:According to the procedures and methods for toxicological assessment on food safety,we evaluated the toxicity of pork preservative;Its efficacy of preservation was evaluated after the pork was sprayed on preservative then cultured at 35℃ for 20h.Results:The results of toxicity assay showed that the LD 50 >10000mg/kg,Kcum>5 3,and that of micronuclous test of bone marrow cell,sperm shape abnormality test in mice and Ames test were negative.The results of efficacy showed that the color and odour of pork sprayed with preservative were no change.Speculated the pork on microscope,we found that the arrange of muscle cell was regular.Conclusion:It indicated that the pork preservative has no toxicity and preservative efficacy significantly.更多还原
