【Abstract】 FFAs in GuangDong-style sausage catalysed by tetramethylammonium hydroxide(TMAH) were converted to the TMAH soaps. The TMAH soaps were easily pyrolyzed to yield the methyl ester in the GC injection port. Then the FFAs were separated and determined by GC. The test shows that the method is simple and accurate.更多还原
