高Vc红枣加工工艺及效益分析
Processing of jujube containing high Vc and its beneficial analysis
【摘要】 应用国家重点新产品ZGT型真空干燥机对鲜枣进行加工 ,所得干枣外表仍为玫瑰红色 ,有光泽 ,果肉保持原有浅绿色 ,口感酥脆 ,枣香浓郁 ,无苦涩味 ,无焦味 ,含水量为 4 5%~ 4 6 % ,Vc含量高达 80 0mg 1 0 0g以上。每吨能耗费用仅为 0 0 3~ 0 0 4万元。由于产品质量所赋予的高附加值 ,本文论述的加工方法将产生良好的社会和经济效益。
【Abstract】 The article studied production process and beneficial analysis of high vitamin C jujube.using vaccum drying equipment ,an important new product in China,The dehydrated jujube was produced.THe product kept its original colour,flavor and nutrition.The prercentage of water in product was 4.5~4.6%.Vitamin C content was 848mg/100g.The cost of energy consumption was only 3~4 handred yuan per ton of fresh jujube.Because the product gave high added value,the production process would have great social and economic benefit.
