几种蔬菜在冷藏过程中的品质变化
Quality changes of several vegetables during cold-storage
【摘要】 研究了菠菜、黄瓜、青椒在 3种不同冷藏温度 (1 ,5 ,9℃ )下贮藏时的品质变化。通过对这 3种蔬菜进行感官评分和含水量、VC含量及叶绿素含量的测定 ,发现菠菜、黄瓜 ,青椒分别在 1℃、9℃、5℃下贮藏时的质量变化较慢
【Abstract】 The quality changes of spinach,cucumber,green pepper stored at different temperature (1,5,9 ℃)were studied.By measuring sensory score,moisture content,Vc content,chlouophyll content,found the changes of quality were slow if spinach stored at 1 ℃,cucumber at 9 ℃,green at 5 ℃.
