牦牛肉冷冻干燥过程的研究
Study on Freeze-drying Process of Yak Meat
【摘要】 研究了牦牛肉的冻干过程 ,得到了牦牛肉的共熔点、冻干曲线及其传热传质特性。探讨了牦牛肉在冻干过程中系统压力及其物料厚度对冻干速率的影响 ,确定了解析阶段循环调压的方法以及物料的最佳冻干厚度
【Abstract】 The freeze drying process of yak meat was studied.The co melting point,freeze drying cure,the characteristic of heat transfer and mass transfer of yak meat were obtained.The effects of system pressure and material thickness on the freeze drying rate were approached.The method of cycle adjusting pressure in the desorption phase was presented and the optimum thickness of the material was determined.
