天然营养黑米素的营养分析与应用

【摘要】 天然营养黑米素是选用上海交通大学农学院培育的乌贡黑稻作为原料 ,经过一次粗加工和二次精细加工 (挤压工艺和低温干燥 )而制成 ,富含B族维生素和铁、锌、磷、钙及粗纤维等营养素。本成果已获发明专利 ,已在制面、糕团等食品行业中应用 ,并经食疗临床试验证明 ,可直接添加到米中煮饭、粥作为健康食品 ,对提高血红素有一定的作用

【Abstract】 Natural nutritive black rice pigment was made by Wu gong black rice, which was bred by Agricultural College of Shanghai Jiaotong University.The pigment was produced by one rough processing and two refined processing (extruding technology and drying under low temperature), contains rich V B, Fe, Zn, P, Ca and crude fiber. This achievement was rewarded a nationala patent for invention and was applied in making noodles, cakes, pastries and dumplings. As a kind of health food, it can be added in the cooking rice or porridge. The results of the clinical food therapy showed that it had some effects on improving heme.
