【Abstract】 Bitter melon have good value of edible and medicine use, but it was not easy accepted for consumer because it had obvious bitterness. Use fresh bitter melon to raw material, the taste defecting with obvious bitterness of bitter melon was solved by control ripeness level of bitter melon and use of manufacture methods which enzyme treatment, concoction, water blanching etc. The special scent of bitter melon had preserved, series products of bitter melon were developed and produced.更多还原
