【摘要】 对浙江衢州产黄色桔皮进行了色素提取和理化性能研究。研究表明 :黄色桔皮色素水溶性好 ,对光、热的耐受性强。当 p H为 2～ 1 0时 ,色素稳定性好。对于多种金属离子的作用不显著 ,色素对氧化剂 H2 O2 的耐受能力较差 ,对还原剂 Na2 SO3的耐受能力强。更多还原

【Abstract】 The extraction, physical and chemical performance of yellow tangerine peel, grown in Quzhou city of Zhejiang Province were studied. It has good light resistance, heat resisting property and is water soluble. Its stability is good when the pH is within 2~10. The pigment is not reacted too much with varied metal ions, it has less resistance capability against oxidizing agent——H 2O 2, and has better endurance capability against reducing agent——Na 2SO 3.更多还原
