黄颡鱼的含肉率及肌肉营养价值研究
Study on flesh content and its nutritive value of Pseudobagrus fulvidraco (Richardson)
【摘要】 采用常规方法测得广西桂江黄颡鱼的含肉率为 83.88% ;每 1 0 0 g肌肉 (干样 )中含粗蛋白85.96g,粗脂肪 5.0 4 g,粗灰分 5.57g,氨基酸总量为 70 .2 1 g,必需氨基酸含量 2 7.39g,含钙 39.58mg,磷 1 87mg,铜 0 .33mg,锌 5.33mg,铁 4 .75mg,锰 3.0 3mg,硒 74 7.0 6μg。综合分析结果认为 ,广西桂江的黄颡鱼是营养价值较高的优质鱼类
【Abstract】 A conventional method was used to investigate the flesh content and to analyse the nutritional components of the flesh in Pseudobagrus fulvidraco (Richardson) from Guijiang river, Guangxi. The results showed that flesh content of the fish was 83 88%. On the basis of dry matter of the flesh, the contents of crude protein, ether extract and ash were 85 96%,5 04% and 5 57% respectively. The amount of amino acids and essential amino acids were 70 21% and 27 39% respectively. The contents of Ca,P,Cu,Zn,Fe,Mn and Se were 395 8, 1870,3 3, 53 3,47 5, 30 3 mg/kg and 7470 6 μg/kg respectively.It was thought that yellowheaded catfish is one of quality fishes with better nutritive value.
