干燥前预处理对胡萝卜脱水机理和产品质量的影响
EFFECTS OF PRE DRYING TREATMENTS ON DEHYDRATION MECHANISM AND PRODUCT QUALITY FOR CARROTS
【摘要】 依据实验结果的分析和讨论 ,研究了胡萝卜热风干燥前烫漂、冻结、糖液浸渍等预处理对干燥过程热量传递和质量传递以及产品质量的影响 .
【Abstract】 The effect of blanching,freezing and sucrose dipping before air drying on heat and mass transfer and product quality during carrot cube dehydration was studied on the basis of experimental analysis and investigation.
