袋装食用小竹笋腌笋制品的研制
Preparation of Packed Bamboo Shoot Pickle
【摘要】 对雷竹、高节竹等食用小竹笋春笋的适当处理,将其制成袋腌笋软包装产品完全可行,而且具有竹笋原有的鲜味和香味,保质期能达到6个月以上的商业性要求。
【Abstract】 After proper treatment, edible bamboo shoot, such as Phyllostachys praecox j. pervernalis and Phyllostachys prominens, could be manufactured into packed pickle. It remained original fragrance and sweet taste and length for perservation was more than 6 months.
