以阿拉伯胶为主要壁材的九头狮子草红色素微胶囊化色素液稳定性的比较研究
COMPARISON ON THE STABILITY OF DIFFERENT PIGMENT SOLUTION OF GUM ARABIC AS MAIN MICROENCAPSULATING AGENTS INCLUSION FOR RED PIGMENT FROM PERISTROPHE JAPONICA
【摘要】 本文研究了以阿拉伯胶为主要壁材 ,阿拉伯胶与蔗糖为复合壁材的九头狮子草红色素的微囊化方法 ,并对微囊化红色素液的物理和化学稳定性进行了探讨。结果表明 ,以阿拉伯胶与蔗糖配比为 2∶ 18的微囊化色素液理化性质较稳定。为九头狮子草红色素应用于食品生产及微囊化技术中壁材的选择提供了理论依据
【Abstract】 The research is to probe into microencapsulation of Peristrophe japonica red pigment and chemical stability of microencapsulation pigment solution with the wall material which mainly consists of Gum arabic.The result shows that the proportion of Gum arabic and sucrose of the wall material is 2∶18(consistence of the systematic wall material concentration 20%).The microencapsulation pigmant solution has a better chemical stability.It supplies theoretical evidences for using of Peristrophe japonica red pigment in food production and choosing of microencapsulation in agents inclusion.
