【Abstract】 Biotechnology is a promising high tech in the latest technology revolution. Biotechnology in the dairy starter culture industry has got great achievements in theory and technology. These key applications include bacteriophage resistance, stabilization of plasmid linked activities, flavor and texture enhancement, production of bacteriocins, production of food grade enzymes and heterologous protein and so on. Several main applications and tools for biotechnology of LAB were discussed. Development trend was also noticed.更多还原
