荞麦精粉中的黄酮及其自由基清除活性

【摘要】 对 5种不同来源的荞麦Astra、Hruszowska、LeHarpe、Lileja及Prego的黄酮物质进行了研究。光谱分析表明Astra、Hruszowska、LeHarpe、Lileja和Prego精粉中总的抗氧化剂含量分别为 14 6、2 1 4、13 8、16 0和 11 4mg/ 10 0 g ;反相高效液相色谱分析说明 ,除了荞麦中最重要的芦丁以外 ,Astra中有白藜芦醇、原儿茶酸和儿茶素 ;Hruszowska中有原儿茶酸和儿茶素 ;LeHarpe中有白藜芦醇、原儿茶酸和儿茶素 ;Lileja中有白藜芦醇和儿茶素 ;Prego中有儿茶素和白藜芦醇。精粉中芦丁的含量按品种名称字母顺序依次为 5 6、3 8,10 1、6 3和 4 9mg/ 10 0 g。进一步的细胞培养实验揭示 ,荞麦精粉醇提物能有效地防止自由基引发的氧化反应 ,Astra和Hruszowska提取物的作用特别明显。

【Abstract】 Fine flours from five cultivars of buckwheat, Astra and Lileja from Russia, Hruszowska from Poland, Le Harpe from France, and Prego of German native stock, introduced and cultivated in the experimental field of the University of Hohenheim, were investigated in respect of antioxidant compounds Spectrophotometric measurements showed that the content of total antioxidants was 14 6, 21 4, 13 8, 16 0, and 11 4 mg/100 g of fine flours in Astra, Hruszowska, Le Harpe, Lileja, and Prego, respectively Reversed phase high performance chromatography analyses revealed protocatechuic acid and/or catechin, and resveratrol in Astra; resveratrol, protocatechuic acid and catechin in Hruszowska; resveratrol, protocatechuic acid and/or catechin in Le Harpe; resveratrol and catechin in Lileja; and resveratrol and catechin in Prego, apart from the most important flavonoid rutin in buckwheat, whose amount was 5 6, 3 8, 10 1, 6 3, and 4 9 mg/100 g of flours in the alphabetic sequence of names of the cultivars Further cell cultivation assay suggested that all the ethanolic extracts of buckwheat flours were apparently effective to retard free radical induced oxidation, but Astra and Hruszowska extracts were extremly significant against control, implying the origin of buckwheat cultivar determining the quality
