稻谷吸附的热力学性能研究

【摘要】 在试验研究早、中、晚 6品种稻谷吸附特性数据的基础上 ,用物理化学理论建立的稻谷对水分吸附的热力学参数 ,分析了稻谷的吸附特性。结果表明 :稻谷的吸附热与aw(水分活度 )相关 ,aw 小 ,吸附热值大 ;aw 大 ,吸附热值小。吸附热反映了稻谷表面与水蒸汽分子之间作用力性质。稻谷的结合能与稻谷温度、含水量、水分活度有关 ,温度高 ,结合能高 ;水分活度高 ,结合能就低 ;稻谷的含水量大 ,结合能也就低 ,反之 ,则高。稻谷的水传递势随稻谷含水量增加而增加 ,温度升高 ,质传递势增加。通过吸附性能参数为定量分析稻谷等温吸湿性物料吸附与干燥性能提供了理论依据

【Abstract】 The thermodynamic parameters of rough rice sorption were developed on the basis of the experimental data on the sorption characteristics of rough rice and physico-chemical theory. The research indicates that the sorption heat of rough rice is correlated to its water activity( a w). The smaller the value of a w,the larger the sorption heat. On the other hand the smaller the sorption heat, the larger the value of a w.The sorption heat characterizes the binding force between the surface of rough rice and the vapor around it. The binding energy of rough rice is correlated to temperature, water content and water activity respectively. When the temperature, the water activity or the water content increase, the binding energy decreases. The water transfer potential of rough rice increases in accordance with temperature or water content. The parameters of sorption characteristics of rough rice can be applied conveniently to the quantitative analysis of sorption characteristics and drying property of rough rice.
