【Abstract】 Flaxseed gum, a kind of natural plant gum, consists mainly of polyoses such as galactose and xylose. The studies on the physical and chemical properties of flaxseed gum indicate that it is very soluble in water. The flaxseed mucilage has the same rheology as non Newtonian flow. Its viscosity was stable at pH 6～12. The gum has good foamability, stability, emulsibility and salt resistance.更多还原
