【摘要】 本文主要研究用盐析法从佛手瓜中提取果胶，通过正交实验，对其工艺条件进行探讨，得出提取的最佳条件和产率。

【Abstract】 In this essay,We mainly make a study of extracting pectin from sechivm edule by salting- out We conclude the best technological conditions for extracting and the rate of production.
