精米厂节碎米发酵性饮料的研究
STUDIES ON FERMENTED DRINK MADE FROM ODDMENTS OF RICE
【摘要】 讨论了以节米碎米为主要原料 ,生产含汽发酵性饮料的工艺流程和工艺参数。结果表明 :将节米适度粉碎 ,有利用于糖化发酵的进行。采用以α -淀粉酶液化 (温度90℃ ,时间 30min ,用量 15u/g淀粉 ) ,酿酒酵母 (0 .0 1% )与酒曲 (0 .3% )混合发酵 ,以及发酵液混充CO2 等工艺 ,研制出的发酵性饮料口感好 ,风格突出。
【Abstract】 The technological process and parameters of the production of fermented drink containing gas are discussed.Its main material is oddments of rice.The results show that the oddments of rice crushed moderately make saccharification easily.The best condition of liquification is α-amylase 15u/g at 90℃ for 30 minutes for fermentation,the consistency of yeast and distiller’s yeast are 0.01% and 0.3% respectively.The fermented drink filled with CO 2 tastes nice and unique.
