天然抗氧化剂发展近况
New Development in Natural Antioxidants
【摘要】 从中草药中天然抗氧化剂的开发、天然抗氧化剂抗氧化效果的评估及其影响因素、天然抗氧化剂之间的相乘作用、天然抗氧化剂对油脂氧化稳定性的促进作用等几方面对天然抗氧化剂的发展近况进行了概述。
【Abstract】 In this article,exploiting of antioxidants from Chinese medicinal herb,evaluation of antioxidative effect of nature antioxidants and its affecting factor,multiplying effect of nature antioxidants,promotion of nature antioxidants on the oxidative stability of lipid and the application of nature antioxidants in food were summarized.
