丝素蛋白的胶凝和凝胶稳定性的研究
Studies on the stability of Gel and Gelation of Silk Protein Fibroin
【摘要】 丝素溶液在一定条件下发生凝胶, 丝素结构从液态时的无规卷曲转化为凝胶状态时的β构象, 其干胶粉末也为β构象。丝素凝胶具有较高的结晶性, 其结晶部分是由Gly, Ala,Ser, Tyr 等氨基酸组成, 为一稳定的蛋白质凝胶。
【Abstract】 The gelation of fibroin solution occurs on certain conditions.The structure of fibroin is changed from random coil to β structure during gelatinizing.And the structure of dried gel powder is also the β structure.The fibroin gel has high degree of crystallinity.And the crystalline region of the fibroin consists of Gly,Ala,Ser,and Tyr etc.
