蜀葵花红色素的提取及性能研究

【摘要】 蜀葵花花色鲜艳 ,产花量大 ,具有活血、通便、消炎、消肿、解毒等药理作用。本文对蜀葵花红色素的提取及其对光、热、氧化剂、还原剂、食品添加剂、酸、碱等稳定性进行了研究。结果表明 :蜀葵花红色素在酸性介质中有较高的光稳定性和热稳定性 ,并通过小鼠急性毒性实验 ,证明其安全无毒 ,表明该色素具有较好的开发利用价值。

【Abstract】 Hollyhock is a kind of bright colored flower,which has a high production.It has pharmacological effects on activating blood circulation,relaxing the bowels,anti inflammation detumescence,detoxification and so on.Study on extraction and stability of hollyhock flower red pigment about light,heat,oxidizing agent,reducing agent,foodadditive,acid,alkali and so on.The resaults indicate that the red pigment of hollyhock flowers possesses higher stability of light and heat in acid medium.It turns out that the pigment is safe and not toxic through the acute toxic test on mice.The pigment has better value to develop and use.
