乳糖水解过程低聚半乳糖的形成及机制
Galactooligosaccharide Formation and Mechanism during Lactose Hydrolysis
【摘要】 介绍双歧杆菌生长因子──低聚半乳糖对机体的生理功能,综述了β-半乳糖苷酶水解乳糖的作用机理及不同来源的β-半乳糖苷酶形成的转化产物,列出乳精酶水解的四种模式,并阐述低聚半乳糖的研究现状和发展前景。
【Abstract】 The biological function of bifidobacteria growth factor, galactooligosaccride were presented. Investigation of β-galactosidase action on lactose and the products of its hydrolysis had brought much insight into the reaction mechanism. Four models were used to provide qualitative information on the reaction. Its current research situation and prospects were also covered briefly.
