英德高香型茶叶香气及化学组成特征研究

【摘要】 英德的黄 木炎 茶树等品种为优质高香型品种 ,具有独特的自然花香味。对其茶叶分析结果表明 ,咖啡碱、氨基酸、总糖及多酚类物质含量较多 ,说明其品质较好。初步检出了 5 4种香气的化学成分 ,含量较高的有法呢烯、法呢醇、吲哚、磷酸三丁酯、芳樟醇及其氧化物、罗勒烯、苯乙晴、苯乙醇等 ,其中法呢烯、法呢醇、吲哚、磷酸三丁酯和苯乙醇等含量比其他茶叶的含量高 ,这些成分跟英德高香茶具有的自然花香味可能有密切的关系

【Abstract】 Huangyan tea tree in Yingde City is a high-quality rich-fragrance tea tree,which has unique natural flower fragrance.The analysis of the tea leaves shows that they contain considerable amounts of caffeine,amino acids,total sugar and polyphenol substances,and that they are of a high quality.54 chemical components of fragrance are preliminarily detected,among which farnesene,farnesol,indole,tributyl phosphate,linalool and its oxide,ocimene,benzeneatonitrile,benzeneethanol,etc. are of a relatively high content.Furthermore,the contents of farnesene,farnesol,indole,tributyl phosphate and benzeneethanol are higher than those in other tea leaves.All these components may have something to do with the natural flower fragrance of Yingde Rich Fragrance Tea.
