番木瓜、橄榄蜂花粉营养成分的分析与评价
Analysis and Evaluation of Main Nutrients from Bee Pollens of Caria papaya and Canarium album
【摘要】 经测定,番木瓜、橄榄蜂花粉的蛋白质含量分别为21.831%和19.194%;总糖含量分别为22.66%及22.08%冰解氨基酸的总含量分别为21.707%和23.307%,游离氨基酸的总含量分别是394.257mg/100g和562.941mg/100g,两者均具8种人体必需氨基酸,总含量分别为9.118%和8.851%,比值与FAO/WHO(1973)提出的理想蛋白质中人体必需氨基酸的比率模式接近,氨基酸分分别为77.7和92.6,番木瓜的限制性氨基酸为亮氨酸和缬氨酸,橄榄的限制性氨基酸为完氨酸。不饱和脂肪酸占脂肪酸总含量的68.79%和67.79%,多烯不饱和脂肪酸与饱和脂肪酸的比值分别为1.69及1.43。番木瓜、橄榄蜂花粉含10种维生素,其中维生素C含量最高,分别达到50.32mg/100g和35.41mg/100g;番木瓜、橄榄蜂花粉除磷、钙、锌的含量普遍较高外,多数矿质元素的含量与其他果树蜂花粉相近。
【Abstract】 Bee pollens of Caria papaya L. and Canarium album (Lour.) Raeusch were ana-lyzed in terms of nutrient content to evaluate their nutritive value. The bee pollens from bothplants were found to contain respectively 3.493% and 3.071 % total nitrogen, 21.831 % and19.194 % protein, 19.51 % and 20.32 % soluble sugar, 3.15 % and 1.76 % polysaccharose,21.707 % and 23.307 % total hydrolyzed amino acids (TAA), 9.118 % and 8.851 % essential amino acids (EAA). Amino acid score (AAS) was 77.7 and 92.6. Limiting amino acidswere LEU and VAL. The 18 free amino acids were detected to contain 394.257 mg and562.941 mg per 100 g of bee pollens. Eight fatty acids were detected in the bee pollens andfound to contain 31.21 % and 32.21 % saturated fatty acids and 68.79 % and 67.79 % unsaturated fatty acids in the fatty acids. The ratio of total contents of polyunsaturated fatty acids(PUFA) to saturated fatty acids (SF) were 1.43 and 1.69 respectively. The bee pollens contained 10 vitamins of which vitamin C was very higher (50.32 mg/100 g and 35.41 mg/100 g)as compared to those of other fruit trees. The bee pollens also contained rich mineral elements especially P, Ca and Zn.
