明胶氧化产物的分子量分布

【摘要】 用改进的SDS-PAGE凝胶电泳法对明胶氧化产物的分子量分布进行了测定。结果表明:当氧化时间小于24h,H2O2用量低于60mmol/g胶时,分子量各组分的分布没有太大的变化。这是H2O2氧化明胶的临界条件。

【Abstract】 The molecular weight distributions of oxidized gelatin was determined by the improved SDS-PAGE method.The experimental results showed that when oxidation duration was shorter than 24 hours at 40℃ and the amount of hydrogen peroxide added was less than 60mmol/g gelatin,the molecular weight distribution of oxidized gelatin had no remarkable change.These two factors may be considered as the safe conditions for H2O2-Oxidation of gelatins
