酶催化分光光度法测定食品中总胆固醇含量
Determination of Total Cholesterol in Food by Enzyme Catalytic Spectrophotometry
【摘要】 本文研究了直接皂化法处理样品,采用酶催化分光光度法将食品中的胆固醇转化为红色醌亚胺染料,在500nm 处比色测定。并且提出了一种简便、快速测定食品中总胆固醇含量的分析方法。该法的回收率为94.1% - 103.7% ,相对标准偏差为1.74% - 3.33% ,线性范围为20- 600m g/100g。
【Abstract】 A enzyme catalytic spectrophotometic method with simple for the determination of cholesterol in food has been developed.The sample was directly saponified,then the cholesterol in food was transferred into the red quinoneimine dyes with maximum absorption at 500nm in this method.The recoveries of the method were 94.1%-103.7%,the RSD was 1.74%-3.33% and the linear range was 20-600mg/100g.
