【摘要】 本文研究了直接皂化法处理样品，采用酶催化分光光度法将食品中的胆固醇转化为红色醌亚胺染料，在５００ｎｍ 处比色测定。并且提出了一种简便、快速测定食品中总胆固醇含量的分析方法。该法的回收率为９４．１％ － １０３．７％ ，相对标准偏差为１．７４％ － ３．３３％ ，线性范围为２０－ ６００ｍ ｇ／１００ｇ。更多还原

【Abstract】 A enzyme catalytic spectrophotometic method with simple for the determination of cholesterol in food has been developed.The sample was directly saponified,then the cholesterol in food was transferred into the red quinoneimine dyes with maximum absorption at 500nm in this method.The recoveries of the method were 94.1%-103.7%,the RSD was 1.74%-3.33% and the linear range was 20-600mg/100g.更多还原
