盐渍鳕鱼退盐过程的动力学研究与应用开发

【摘要】 工业化盐渍鳕鱼退盐加工采用的大型敞口退盐槽存在诸多问题,如退盐效率低;鱼肉品质劣变;劳动强度大等问题。本研究提出的解决方案包括改进退盐工艺以及采用自动化技术进行退盐。本研究搭建了一套超声波-臭氧-循环低温水的半自动化退盐设备,通过对生产中鱼肉的质量变化率、水分含量、盐度,退盐水电导率的过程监测,进行传质动力学模型的拟合与验证。研究发现本工艺及设备有效加快了退盐效率,减缓了品质劣变,有望提升退盐均衡性。Peleg经验模型、基于t0.5的伪扩散模型充分描述了盐渍鳕鱼退盐与再水合的动力学过程,单级换水与多级换水整体符合Peleg模型。借助模型预测控制思路,得到一种实现自动化退盐工艺的控制方案并通过PLC及相关辅助技术实现对退盐设备的自动化改造。

【Abstract】 There are many problems with the large open desalting tanks used in the industrial desalting process of salted cod,such as low desalting efficiency,deterioration of fish quality,and high labor intensity.The solutions proposed in this study include improving the desalting process and using automated technology for desalting.In this study,a set of semi-automatic desalting equipment with ultrasonic-ozone-circulating low-temperature water was built.The mass transfer kinetic model was fitted and verified by monitoring the mass change rate,moisture content,salinity,and conductivity of the desalted water during production.The study found that this process and equipment effectively accelerated the desalting efficiency,slowed down the quality deterioration,and was expected to improve the balance of desalting.The Peleg empirical model and the pseudo-diffusion model based on t0.5 fully described the kinetic process of desalting and rehydration of salted cod.The singlestage water change and multi-stage water change were generally in line with the Peleg model.With the help of model predictive control ideas,a control scheme for realizing the automated desalting process was obtained,and the automated transformation of the desalting equipment was realized through PLC and related auxiliary technologies.
