超声辅助壳寡糖乳液包封百里香酚:提高稳定性和抗菌性能以用于食品保鲜
Enhanced stability and antibacterial efficacy of thymol through ultrasound-assisted chitosan-oligosaccharide emulsion encapsulation for food preservation

【摘要】 百里香酚是一种源自植物的天然芳香化合物,具有优异的抗氧化和抗菌特性。为解决百里香酚的易挥发和易氧化问题,我们利用乳液递送系统包封稳定性较差的百里香酚,构建了天然、安全的新型抗菌材料,可用于延长食品货架期。采用超声辅助乳化法构建乳液体系,利用天然多糖壳寡糖与聚乙烯醇共同稳定油水界面,对百里香酚进行直接包封,研究了百里香酚含量对乳液稳定性的影响,考察了乳液对百里香酚的包封效果,探讨了乳液包载对百里香酚的抗氧化和抗菌效果的提升作用。宏观照片显示乳液呈均一浅棕色,显微镜观察发现乳液液滴分布均匀,大小一致,粒径为225 nm左右,在21天内乳滴无明显聚集现象,粒径和电位(30 mV)没有明显变化,具有良好的储存稳定性;乳液对百里香酚有着良好的包封效果,包封率维持在95%以上;同时,乳液的包载有效提升了其抗氧化能力和抗菌性能,其对ABTS和DPPH的自由基清除率可达到70%以上,最小抑(杀)菌浓度测试和抑菌圈结果表明其对有害细菌(大肠杆菌、金黄色葡萄球菌)和真菌(青霉菌)的生长均具有明显的抑制作用。该乳液由天然材料构建,安全无毒且具有优异的抗氧化和抗菌效果,可用于食品的涂膜保鲜,具有良好的实际应用前景。
【Abstract】 Thymol,a natural aromatic compound derived from plants,possesses excellent antioxidant and antibacterial properties.To address the volatility and oxidative instability of thymol,we employed an emulsion delivery system to encapsulate the less stable thymol,creating a novel,natural,and safe antibacterial material that can be used to extend the shelf-life of food.We developed the emulsion system using ultrasound-assisted emulsification,utilizing a combination of natural polysaccharide chitosan-oligosaccharide and polyvinyl alcohol to stabilize the oil-water interface.Thymol was directly encapsulated,and we investigated the effect of thymol content on the stability of the emulsion,the encapsulation efficiency of thymol,and the enhancement of its antioxidant and antibacterial properties through encapsulation.Macro photographs showed that the emulsion had a uniform light brown color,and microscopic observation revealed a uniform distribution with consistent particle sizes around 225 nm.Over 21 days,there was no significant aggregation of emulsion droplets,and both droplet size and zeta-potential(30 mV) remained stable,indicating good storage stability.The emulsion demonstrated excellent encapsulation efficiency for thymol,maintaining an encapsulation rate above 95%.Additionally,the encapsulation significantly enhanced the antioxidant and antibacterial activities of thymol,achieving over 70% radical scavenging rates for ABTS and DPPH.Minimum inhibitory(bactericidal) concentration tests and inhibition zone assays showed that the emulsion effectively inhibited the growth of harmful bacteria(Escherichia coli,Staphylococcus aureus) and fungi(Penicillium).Constructed from natural materials,this emulsion is safe,non-toxic,and possesses excellent antioxidant and antibacterial effect,making it a promising candidate for use in food coating preservation with substantial practical annlication potential.
