酶促磷脂改性技术在海洋脂质营养强化中的应用

【摘要】 脂质生物化学的快速发展和现代生物技术的发展,为开发生产结构化或修饰的脂质酶促改性技术提供了基础。通过特殊的结构特征修饰和改性,磷脂修饰技术在改善人类健康也显示出巨大的应用潜力和独特功能活性。海洋活性脂质为一种重要的海洋功能性食品原料,其富含DHA、EPA等多不饱和脂肪酸是其最重要的结构特征,在保留PUFA基础上进行新颖结构磷脂修饰,已成为功能性脂质研发的新方向。团队基于磷脂酶D的酶促催化反应,通过优化底物选择与反应设计,得到了 DHA-PtdEtn/PtdSer,DHA-PtdGlc,DHA-PtdMan等系列新型磷脂衍生物,在神经功能、脂质代谢功能、肠道功能上起到了营养强化作用,此外阐明了新型磷脂衍生物通过靶向TrkA/TrkC/PPARγ等受体调控机体健康的关键机制。
【Abstract】 The rapid development of lipid biochemistry and modern biotechnology has provided a foundation for the development and production of structured or modified lipid enzymatic modification technologies.Through special structural features modification and modification,phospholipid modification technology has shown great potential and unique functional activity in improving human health.Marine active lipids are an important marine functional food ingredient,rich in polyunsaturated fatty acids such as DHA and EPA,which are its most important structural features.Novel structural phospholipid modifications while retaining PUFA have become a new direction for the development of functional lipids.Based on the enzymatic catalytic reaction of phospholipase D,the team optimized substrate selection and reaction design to obtain a series of novel phospholipid derivatives such as DHA-PtdEtn/PtdSer,DHA-PtdGlc,and DHA-PtdMan,which play a nutritional enhancing role in neurological function,lipid metabolism,and intestinal function.In addition,the key mechanism by which the series of novel phospholipid derivatives regulate body health by targeting receptors such as TrkA/TrkC/PPARγ was elucidated.
