【摘要】 本试验对比研究了西门塔尔杂交一代和杂交二代育肥牛的肉质性状。发现杂交二代肉牛的熟肉率、眼肌面积、肌肉剪切力等指标显著高于杂交一代(p<0.05);亚油酸、亚麻酸等含量显著低于杂交一代(p<0.05),说明西门塔尔不同杂交世代的肉质性状存在显著差异。更多还原

【Abstract】 The meat quality of the first filial(F1) and the second filial(F2) generation of simmental crossbred cattle were compared.The results showed that the cooking percentage, eye muscle area and shear force of the F2 were significantly higher than the F1(P< 0.05). And the contents of linoleic acid,linolenic acid were significantly lower than the F1(P< 0.05).This research suggested that there were significant differences in meat quality traits between the different generations of simmental crossbred cattle.更多还原
