铁观音、黄旦茶梢粗纤维含量及其力学特性研究

【摘要】 本文对不同叶位、季节的铁观音、黄旦茶梢的粗纤维含量及其力学特性进行测定,研究表明,不同季节铁观音粗纤维含量在16.37±0.31%~18.53±0.61%之间,黄旦的粗纤维含量在15.33±0.26%~19.92±0.30%之间,粗纤维含量与茶梢嫩度呈极显著负相关;夏季铁观音和黄旦茶梢的弹性模量分别为10631.66±3408.20Kpa和5501.96±1155.66 Kpa,最大应力分别为2087.59±144.65 Kpa和1055.24±129.74Kpa,断裂应力分别为1432.38±78.96Kpa和914.79±159.50 Kpa,最大应变为14.97±5.70%和19.84±3.13%,断裂应变分别为16.57±5.89%和20.44±3.84%,不同品种乌龙茶茶梢的力学特性差异极显著,该结果为合理控制乌龙茶包揉工艺参数提供了科学依据。
【Abstract】 The crude fiber content and mechanical properties of tea shoot from Tie-Guan-Yin and Huang Dan were investigated in different leaf-position and different season.The results showed that the crude fi-ber content of Tie-Guan-Yin and Huang Dan was in the scope of 16.37±0.31%~18.53±0.61% and 15.33±0.26 %~19.92±0.30%respectively.The crude fiber content was significantly and negatively correlated to leaf-position.The modulus of elasticity of Tie-Guan-Yin and Huang Dan was 10631.66±3408.20 kpa and 5501.96±1155.66 kpa respectively.The maximum stress of Tie-Guan-Yin and Huang Dan was 2087.59±144.65 kpa and 1055.24±129.74 kpa respectively while the breaking stress was 1432.38±78.96 kpa and 914.79±159.50 kpa respectively.The maximum strain of Tie-Guan-Yin and Huang Dan was 14.97±5.70% and 19.84±3.13% respectively while the fault strain was 16.57±5.89% and 20.44±3.84% respectively.The me-chanical properties of tea shoot between Tie-Guan-Yin and Huang Dan were significantly different.This study provides theory basis for packed rolling of oolong tea.
